Too Hot To Handle!

Everyone has a calling but not everyone has a chilli calling.

When I was little I wanted to be a teacher until I landed a brief teaching stint at my old high school and witnessed first hand what raging hormones could do to perfectly innocent 14 year minds…and bodies. Needless to say, the idea was canned. Next I wanted to be a journo, I love reading, I love writing and I am good at finding things (yes ask around, there are some serious concerns around my severe spying instincts). Perfect skill set but unacceptable career choice ( You can read more about that here).

So I gave up the writing thing and did the IT thing instead. Isn’t that what everyone did in the late 90′s/early 2000′s ?A few years later, reality TV became a rage and with that came likes of reality cooking shows like My Kitchen Rules, Iron Chef and Masterchef. With my pretty fabulous culinary skills (yes even if I say so myself), you guessed it – I wanted to be a chef ! and though its not quite a restaurant or a cafe, I do serve up some pretty special food here at Mumchic HQ as featured here and there on the blog as well.

I enjoy experimenting with various cuisines, recipes and introducing fresh flavours to our menu. Some say I might be spoiling the fab 2 with so much variety but to me, it means I am exposing them to myriad cultures through their taste buds. How often is it that we find ourselves curious about a country and its culture because we have tasted their food. Being a foodie is an education itself you see!

We at mumchic HQ like a bit of bite in our food barring FS2 who is only just learning to enjoy the kick. I have used all types of chillies in my cooking over the years –  jalapeno, bullet, bird’s eye, bell pepper, serrano and cayenne to name a few. But a month or so ago, I discovered an untested chilli – the habanero. Originating from Mexico and dating back to 6500 BC, habanero chillies as I have swiftly discovered over the past month, pack quite a punch. There is no way you can comfortably bite into these chillies like you would say the less potent anaheim. There are definitely not a salad or a garnishing chilli. But add one of these beauties to the final stages of your curry and you may just be taking your masterpiece to a whole new level of flavour and zing. I wouldn’t recommend adding any more than one habanero per dish that serves 4-6 otherwise you would kill the flavours it brings out. Infact even if you do like a bit of heat, I strongly suggest maybe adding half a habanero to start with – yes indeed as the title suggests, it is too hot too handle….  and we don’t want you looking like this !

me, I have decided that from now on, Habanero is my chilli calling and I will be finding ways to incorporate them in my everyday cooking. Who knows, I might have the next tobasco in my hot little hands!

Some Reader Love, A Competition Winner And A Thankyou Note.

Back in May, we ran our first giveaway for Australian readers to win an uber retro TYPO clock.We invited our readers to write in 50 words or less what Mumchic meant to them. Due to shall we say certain technical issues, we were unable to announce the winning entries but it has all been sorted now and I am delighted to announce Mumchic’s first winner.

Here is Inna’s winning entry and her thoughts on Mumchic albeit longer than 50 words, we couldn’t resist handing it to Inna for being so generous with her praise :)

What is Mumchic to me? It is an inspirational morning reading over my morning cuppa, and it can be water – I still would believe it is that strong burst of coffee aroma just steaming from the website pages, invading my room and my nostrils. It is an excellent chicken soup –  and not just chicken soup for the tummy, but the chicken soup for the soul. Needless to mention actual chicken soup and other yumminess webstreaming from the page!!! It is a good old whinge about something, place to share thoughts and to find those sharing your thoughts, ideas and opinions, a nice friend’s catch up! Well, to sum up, it is just a very cosy place one may find in the universe of virtuality.

Semolina….Simply!

semolina - Semolina is the coarse, purified wheat middlings of durum wheat used in making pasta, breakfast cereals, puddings and couscous. Semolina is also used to designate coarse middlings from other varieties of wheat, and from other grains such as rice and corn.

Halva - (or halawa, xalwo, haleweh, ħelwa, halvah, halava, helava, helva, halwa, halua, aluva, chalva, chałwa) refers to many types of dense, sweet confections, served across the Middle East, South Asia, Central Asia, West Asia, North Africa, the Horn of Africa, the Balkans, Eastern Europe, Malta and the Jewish world.

With its origins possibly in Abyssinia or southern parts of the Mediterranean ocean, semolina is a wonderful, hearty, protein rich grain that has been around for a very long time. Also known in many parts of the world as “cream of wheat”semolina is used to make popular products such as breads, pasta, couscous, tabbouleh and noodles to name a few.

What I find very fascinating is how the grain has found its way into many cultures and is used extensively is so many cuisines.In the Indian sub-continent, lightly sweetened semolina  porridge is one of the first solids introduced to a baby’s diet. It is considered nourishing and rich in nutrients the same.

If I were to pick my top 5 favourite comfort foods, Sooji Ka Halwa,a popular Pakistani dessert prepared with semolina, would definitely rate very high. A rich sweet when cooked perfectly, embodies the density and wonderful texture of semolina. Sooji ka halwa is also a   much loved Pakistani breakfast dish often served with freshly friend pooris (and ofcourse, perfectly acceptable all other times of the day as well!). It might look deliciously complex and elaborate but Sooji Ka Halwa is, in effect, deceptively simple. Read below to find out how!

Sooji Ka Halwa (Semolina Dessert)

You will need:

  • 4 tbsp clarified butter(ghee) or plain butter
  • 1 cup semolina or cream of wheat (sooji)
  • 3/4 cup sugar
  • 4-6 green cardamom pods lightly cracked
  • 3 tsp sultanas/green raisins
  • 2 tsp powdered almonds,pistachios and cardamoms
  • 2 cups water
  • A pinch of orange or yellow food coloring

Preparation:

  • Combine the water, sugar and food coloring and bring to a boil until sugar has fully dissolved and forms a light syrup. Set aside.
  • Heat ghee/butter in a heavy based wok , add cardamom pods and 1 tsp of the powdered nuts, reserve the second tsp for later.This step infuses the butter with a lovely nutty, cardamom flavour.
  • As the cardamom and nuts release a light fragrance, add the semolina and green raisins and fry for about 5-8 minutes on medium heat. Allow the semolina to become a nice, roasted brown taking care not to burn it.
  • Once the ghee begins to separate from the semolina, add the sugar syrup, stir well and then cover to cook on medium-low heat for about 7-10 minutes, stirring occasionally until most of the moisture has evaporated.
  • The halwa is now ready, the texture should feel soft and moist. If there are still some semolina grains that feel raw , add a bit of water and simmer until the halwa is cooked through.
  • Sprinkle remaining powdered nuts as garnishing and serve warm – ideally with freshly made pooris  or just plain.

Mmm who needs restaurants when you can whip up delicious comfort food in your own kitchen.
